There is one last tomato left from my crop, so I had to put it to good use before I go out of town.
I decided to make a quick dinner of pasta with a fresh diced tomato sauce, along with a salad. It was all very fresh and quick (best of all).
First I boiled some fettuccine, which I love.
While that was going I sauteed some garlic in onion in olive oil, then splashed in some white wine and let it reduce.
As that reduced, I whipped up a quick salad dressing. 1 tbsp of dijon mustard, 2 tbsp of apple cider vinegar, then I whisked in some olive oil until it reached a good consistency (to taste). Then I added some salt and pepper.
Last, I chopped up some feta, basil, and seeded the tomato and diced that up (goodbye, sweet, sweet tomato!).
Once the pasta was al dente, I strained it, then put it pack in the pot and poured the olive oil/wine/garlic/onion mixture in there and mixed it up with the tomato. Last I plated it and topped it with the feta and basil. Good stuff.
