Well my power is out in my home office in Atlanta, which really messes up my ability to work. But it’s lunch time anyways so I am taking a break.
Then I realized I can post with the iPhone so suck it Georgia power. You can’t stop my nerdness, you can only hope to contain it.
So I am making lunch with no power and there is only one rule – DO NOT open the fridge.
Here is what I’ve come up with: rigatoni with white bean, garlic, and tomato
All pics will follow but here’s what I’m doing. I am cooking the pasta on the side burner on my grill. Meanwhile I’ve rinsed some cannellini beans, roughly chopped some garlic and some roma tomatoes from the garden, and pulled out some olive oil and Italian spices.
Next I am cooking the white beans on the same side burner and throwing the garlic in after a few minutes.
Last I am throwing in the pasta, some reserved cooking water, basil, dry Italian spices, and the tomatoes. Then I took it off the heat, hit it with lots of salt and pepper and plated.
I am eating as I write this – it’s nothing mind blowing but it’s satisfying and a fun challenge.
